Rice And Eggplant Bowl

• ¼ cup sliced cucumber
• One teaspoon salt
• One tablespoon sugar
• Seven tablespoons Japanese rice vinegar
• Three medium eggplants, sliced
• Three tablespoons sweet white miso paste
• One tablespoon miring rice wine
• 4 cups cooked sushi rice
• Four spring onions
• One tablespoon toasted sesame seeds


1. Coat the cucumber slices with the rice wine vinegar, salt, and sugar.
2. Put а dish on top of the bowl to weigh it down thoroughly.
3. In a bowl, mix the eggplants, miring rice wine, and miso paste. Allow
marinating for half an hour.
4. Press Start/Cancel. Preheat the air fryer oven to 400ºF (204ºC).
5. Put the eggplant slices in the fry basket and insert the fry basket at mid
position. Select Air Fry, Convection, and set time to 10 minutes.
6. Fill the bottom of a serving bowl with rice and top with the eggplants
and pickled cucumbers.
7. Add the spring onions and sesame seeds for garnish. Serve
