Mediterranean Air Fried Veggies

• One large zucchini, sliced
• 1 cup cherry tomatoes, halved
• One parsnip, sliced
• One green pepper, sliced
• One carrot, sliced
• One teaspoon mixed herbs
• One teaspoon mustard
• One teaspoon garlic purée
• Six tablespoons olive oil
• Salt and ground black pepper, to taste


1. Press Start/Cancel. Preheat the air fryer oven to 400ºF (204ºC).
2. Combine all the ingredients in a bowl, making sure to coat the
vegetables well.
3. Transfer to the fry basket and insert the fry basket at mid position.
Select Air Fry, Convection, and set time to 6 minutes, ensuring the
vegetables are tender and browned.
4. Serve immediately
