Crispy Chicken Thighs

• 1lb. chicken thighs
• Salt and pepper
• 2cups roasted pecans
• 1cup water
• 1 cup almond flour


1. Preheat your fryer to 400°F.
2. Season the chicken with salt and pepper, and then set aside.
3. Pulse the roasted pecans in a food processor until a flour-like consistency
is achieved.
4. Fill a dish with the water, another with the almond flour, and a third with
the pecans.
5. Coat the thighs with the almond flour. Mix the remaining flour with the
processed pecans.
6. Dredge the thighs in the water and then press into the almond-pecan mix,
ensuring the chicken is completely covered.
7. Cook the chicken in the fryer for twenty-two minutes, with an extra five
minutes, added if you would like the chicken a darker-brown color. Check
the temperature has reached 165°F before serving.
