Chicken Breasts & Spiced Tomatoes

• lb. boneless chicken breast
• Salt and pepper
• 1 cup butter
• 1 cup tomatoes, diced
• 1 ½ tsp. paprika
• 1 tsp. pumpkin pie spices


1. Preheat your fryer at 375°F.
2. Cut the chicken into relatively thick slices and put them in the fryer.
Sprinkle with salt and pepper to taste. Cook for fifteen minutes.
3. In the meantime, melt the butter in a saucepan over medium heat, before
adding the tomatoes, paprika, and pumpkin pie spices. Leave simmering
while the chicken finishes cooking.
4. When the chicken is cooked through, place it on a dish and pour the
tomato mixture over. Serve hot.
