Curried Lemon Coconut Chicken

• 1 can full-fat coconut milk
• ¼ cup freshly squeezed lemon juice
• 1 tbsp. curry powder
• 1 tsp. turmeric
• ½ tsp. salt
• 1.5 kg chicken – breasts, thighs, or a combo (whatever you have)
• ½-1 tsp. lemon zest


1. Mix the coconut milk, lemon juice, and spices in a bowl or glass measuring cup.
2. Pour a little bit on the pan of your air fryer toast oven then add in the chicken chunks.
3. Pour in the rest on top of the chicken.
4. Cook at 370 degrees F for 15-20 minutes.
5. Test chicken for doneness by cutting open and observing the center, if you see any pink, cook for 5-10 minutes
6. Use 2 forks to shred the chicken up.
7. Stir in the lemon zest and serve with steamed rice or roasted veggies.
